West West Blue is a raw cow’s milk blue made by @parishhillcreamery in Vermont. It is made in the style of a two-curd Gorgonzola, which means that over 2 days, 2 separate cheeses are made. At the end of the 2nd day, all of the curds (from both days) are combined to form one wheel. This blue isn’t for the faint of heart, but is barnyardy, gamy, and densely fatty, like a stick of blue-veined butter! We’re all obsessed with this new sea buckthorn preserve from @regalisfoods! This preserve is delectably “drizzle-able” and has a ripe apricot-like juiciness with just a hint of salt. We’ve got some or the “king of Swiss cheese” in the building – a whole wheel can weigh well over 200 pounds (spoiler: we didn’t get a whole wheel). These massive wheels can get up to 130 pounds! Beaufort typically has flavor notes of toasted nuts, brown butter, dried grass, and salty cured meat. This gooey, meaty delight is best served at room temperature, with crusty bread (or French fries!) and cured meat on the side.
