Wrapping up my short trip to Portland with a private tour of @olympiaprovisions meat processing plant. This amazingly huge place makes several different types of sausages, salami, pâtés, and pickles…many of which you’ve enjoyed at Milkfarm! It was so fun to see pork rillettes being cooked and hand-chopped, sausages being stuffed, and salami sticks being hand-wrapped. What an honor to have an inside look at one of our favorite meat producers! **Thank you Dylan for your time and hospitality….and answering ALL of my questions ?. 9/1 1)THE HBB 2)TRUFFLE SALAMI 3)GRILLED CHEESE.  COOKIES ???

Had a lovely visit with @briarrosecheese yesterday and had a chance to see where all of the cheese magic happens! Sarah has been making cheese in Dundee, Oregon since 2010. She picks up 200 gallons of cow (Ayrshire and Guernsey) and/or sheep’s milk 3xs per week from 3 different dairies to make cheeses like Maia, Butterball, Calisto, Agness…and delicious Fromage Blanc Truffles! Btw, the milk truck’s name is ? The Unicorn Slayer! Yaaas! After her cheeses are made, they are placed in her aging rooms which are lovingly named Thor (the warmer room) and Heidi (the cooler room “like being in the alps”). I didn’t get to meet the neighborhood ?bobcat, but I did meet Scott which was just as cool (and a lot more fun). Thanks for your time and hospitality Sarah and the Briar Rose Family….hope to see y’all in Los Angeles one day! . . . . . #milkfarmlunch for 08/31: 1.
