Wrapping up my short trip to Portland with a private tour of @olympiaprovisions meat processing plant. This amazingly huge place makes several different types of sausages, salami, pâtés, and pickles…many of which you’ve enjoyed at Milkfarm! It was so fun to see pork rillettes being cooked and hand-chopped, sausages being stuffed, and salami sticks being hand-wrapped.
