Shropshire…a cheese so stunning, you just have to stop and lovingly stare… This wheel of Shropshire Blue from @nealsyarddairy is similar to a Stilton, but is colored with annatto, an odorless, flavorless spice simply meant to add some color! Invented in the 1930s, this type of cheese is still relatively young in the dairy world (Stilton, in comparison, has been around since the 17th century!).
