Meet RUBY, our latest #cheeseoftheweek! Green Dirt Farm makes this Stracchino-style cheese in Missouri. It is loosely inspired by Robiola. Ruby is made with a blend of sheep's milk and Jersey cow's milk, which is sourced from an Animal Welfare Approved farm located close by.
