Bleu d’Auvergne is a raw cow’s milk blue cheese from Auvergne region of south-central France. This is a PDO cheese, which means it is a name-protected cheese in France that must follow strict cheesemaking standards and rules. Bleu d’Auvergne has been around since 1845 (that’s a whole lot of cheese!!).
