Our *Cheese of the Week* is Jasper Hill's WINNIMERE! This hard-to-come-by cheese is inspired by Swiss and French cheeses from the Jura Mountain, such as Vacherin Mont d'Or. The cheese is wrapped in spruce cambium, imparting a woodsy flavor into it.
