Had a lovely visit with @briarrosecheese yesterday and had a chance to see where all of the cheese magic happens! Sarah has been making cheese in Dundee, Oregon since 2010. She picks up 200 gallons of cow (Ayrshire and Guernsey) and/or sheep’s milk 3xs per week from 3 different dairies to make cheeses like Maia, Butterball, Calisto, Agness…and delicious Fromage Blanc Truffles! Btw, the milk truck’s name is ? The Unicorn Slayer! Yaaas! After her cheeses are made, they are placed in her aging rooms which are lovingly named Thor (the warmer room) and Heidi (the cooler room “like being in the alps”). I didn’t get to meet the neighborhood ?bobcat, but I did meet Scott which was just as cool (and a lot more fun).
