A very special delivery just happened, which is why Kelly is holding this wheel like a precious baby. Yes, it’s true, it finally happened – Rogue River Blue has finally landed at the shop! We only have ONE wheel currently, and we’re still enforcing a 1/2 pound cut maximum (gotta spread the blue cheesy love!). RRB is a cow’s milk blue that is wrapped in pear liqueur-soaked Syrah grape leaves, and it won best cheese in the WORLD back in 2019 (the first time an American cheese had ever won this title). Bandaged Bismark is certainly a staff favorite from @crownfinishcaves. This raw sheep’s milk cheddar is made by @graftoncheese in Vermont, then sent to Brooklyn to be larded by hand (with lard from a local butcher shop), and hand-wrapped in cloth. Each wheel is then aged in the caves as a beautiful grayish mold grows on its exterior.
