Bandaged Bismark is certainly a staff favorite from @crownfinishcaves. This raw sheep’s milk cheddar is made by @graftoncheese in Vermont, then sent to Brooklyn to be larded by hand (with lard from a local butcher shop), and hand-wrapped in cloth. Each wheel is then aged in the caves as a beautiful grayish mold grows on its exterior.
