Tomme literally means “wheel” or “round” and this particular cheese is made in the Savoie region in the French Alps. Earthy, and lactic with notes of musty cellar and mushrooms. Chevrot is essentially a little goaty cupcake. Its center is simultaneously fudgy and fluffy, and is surrounded by a creamy, gooey (edible!) rind.
