Tomme literally means “wheel” or “round” and this particular cheese is made in the Savoie region in the French Alps. Earthy, and lactic with notes of musty cellar and mushrooms. A blend of perfectly ripe Washington Rainier and Lapin cherries are paired with aromatic fig leaves for a dense flavor bomb; contrast it with warm vanilla notes and deep purple plums for a perfect fall/winter-time treat.
