← Our cheese of the week is….HARBISON! Harbison is a pasteurized cow’s milk cheese made by Jasper Hill Creamery, and aged in the Cellars at Jasper Hill in Greensboro, Vermont. It is named after Anne Harbison, who is known as the “grandmother of Greensboro”. The cheese is wrapped in a spruce band, collected from the woods of Jasper Hill. When aged and soft, the top of the rind can be sliced off and the paste can be scooped out with a spoon!
