There are a lot of cheeses that only make rare (but exciting!) appearances in our cheese case, and Fumaison is one of them! This raw sheep’s milk cheese from France is hung from the roof for 100 days, just like the tradition of hanging salami or ham. It’s then brined and smoked to bring out a woodsy, meaty, nutty flavor. Is it cheese? Is it salami?
