Old Winchester was created by Mike and Judy Smales (this cheese is often called Old Smales), using an excess of milk from their herd of Friesians in Wiltshire, England. This is made in a Gouda-style, but tastes like the perfect mixture of Gouda, Cheddar, & Parmigiano Reggiano!
