I have always loved Zinc Cafe in Laguna.  Years ago, it was on the forefront of fresh and healthy choices that actually tasted good.  I religiously ordered the granola, which happens to be made by La Brea Bakery.  I decided that I was going to try to make it at home so that I could have it with yogurt and fruit each morning.  I made several batches and tweaked each one.  I came up with a fabulous recipe.  Because I have such a love for cooking, I always share with neighbors, friends, and strangers.  I am known to carry it in my car and offer bags to the homeless on the corners…better than money and it teaches my kids to take care of others less fortunate.  Everyone told me that I should sell it.

So when I was unemployed, I started fiddling with the idea.  I researched the Cottage Act, but when it was time to get my license, I had my first customer in Paso Robles who was ordering 70 pounds a month.  Due to just having one oven, I needed to find more space quickly.  I currently rent kitchen space from a local caterer so that I can keep up with the demand.  As for my Central Coast component, I source many of my ingredients from local farmers at the Paso Robles and Templeton farmers markets, including my avocado honey, which is the key ingredient to it’s flavor.  My granola in not a dry, oaty granola.  It is filled with many nuts and dried fruits.  No, it is not gluten free, as I don’t work in a gluten free kitchen, but it is on my list…
