Cristi works with Spring Brook Farm to bring us some of the finest cheese Vermont has to offer! She will be here sampling their cheeses and can answer any question you may have about cheese, cheese science, milk, or about the great foundation that they are a part of called Farms For City Kids.

“Farms For City Kids Foundation provides a stimulating outdoor classroom where urban youth explore new dimensions of learning as academics are integrated into everyday farm activities that practice and teach sustainability.
This Farm experience encourages teamwork and respect, rewarding children with values such as responsibility, self-confidence and the satisfaction of facing and overcoming challenges.
So different from their everyday lives, this innovative agricultural classroom makes an impression that will last a lifetime.”

“At Spring Brook Farm we make three kinds of cheese from our Jersey Cow milk.  The first, is a semi-hard washed rind cheese called Tarentaise, named after the French Valley which inspired it.  The second, is a semi-soft washed rind cheese called Reading, named after the town in which it is made.  The third, is semi-soft washed rind cheese called Ashbrook, which was inspired by French Morbier style cheese.”

They have too many awards to list on this page, so if you’d like to take a peek at their list of ribbons and medals please click HERE.

We are thrilled to have her with us, and we hope you can come by for a taste of their raw, grassfed, award-winning cheeses! By the way, we use their cheeses for our famous Grilled Cheese and Raclette!
