This week's #cheeseoftheweek is COPPINGER! Coppinger is a raw cow's milk cheese from Sequatchie Cove Creamery in Tennessee. ? Coppinger gets its name from Coppinger Cove, where the creamery is located. This cheese is a Southern take on the classic French Morbier. It's a washed rind cheese with a layer of decorative vegetable ash. The cheese is savory, grassy, & meaty. Recommended pairings are fruity lighter bodied reds, malty ales, and stouts, as well as bacon jam and pickled vegetables!
