DESCRIPTION:Join us for Raclette Night every FIRST Friday of the month during fall and winter! A full menu of Grilled Cheese\, Mac & Cheese\, Cheese Plates\, Cookies\, Beer and Wine will also be available. \nRaclette—which comes from the French word ‘racler\,’ meaning ‘to scrape’—originates from Switzerland\, but we use Reading Raclette from Spring Brook Farm for our version\, a cheese that is grass-fed and 100 percent raw (as opposed to pasteurized). The plate comes piled high with twice cooked fingerling potatoes\, speck\, arugula salad and cornichons\, fresh herbs\, cracked pepper\, plus a side of Dijon mustard. After the Raclette is heated—the massive\, half-wheel of cheese bubbling under a broiler—it is then scraped off into an oozing\, molten pile over the potatoes. If it sounds delicious\, that’s because it is. And at a reasonable $15 per plate\, it’ll leave you full\, satiated with cheese and already planning your next First Friday visit. \n \nRaclette Video <<<See a video of us in action by clicking those blue words! Try some cheese\, ask a lot of questions….these events are for you! \nWhen: Saturday\, November 4th from 11-3pm-ish \nParish Hill Creamery is the passion project of Peter Dixon – rightly believed to be one of the most influential people in the American Artisanal Cheese making community.  He’s been producing handmade cheese and teaching people about it for over 30 years. \nMilk is sourced from a herd of less than 20 milking registered Jersey cows that live at The Putney School – an “arty farty” college prep that focuses on sustainable philosophy (Peter went to high school here!).  A retired Jersey dairyman cares for the herd\, and the students mind the cows as part of their community responsibilities.  Every element of the cheese is handmade – from the milk\, to the cultures (made from the raw milk of the best cows)\, to the salt that is produced in Maine. \nWith his life and business partner Rachel\, Peter only makes cheese when the cows are on pasture.  Cows are “dry” – meaning not milking because they are preparing to give birth – for only ~2 months a year.  This means that Peter COULD make cheese 10 months out of the year\, but then the cows would not be on fresh grass\, a compromise Peter will not make. This coupled with Peter and Rachel’s insistence on home produced starter cultures\, and ZERO lab grown secondary starters makes their production the most true to form in relation to the word “Artisanal” in America. \n“We do things the most difficult way we can figure” – Peter Dixon

We will be hosting a FREE CIDER AND CHEESE tasting at our Cheese Bar. \nShacksbury: Far from ordinary\, apples are the most diverse food plant on earth. Unfortunately\, only a handful of varieties are cultivated at scale in America\, and all of those are designed for eating\, not cider making.\nAt Shacksbury\, we believe cider can\, and should\, be daring and complex. From gnarled trees on New England farmsteads to Old World orchards in England and Spain\, our cider will change the way you think about this amazing fruit. \nSpringbrook Farm: At Spring Brook Farm we make three kinds of cheese from our Jersey Cow milk.  The first\, is a semi-hard washed rind cheese called Tarentaise\, named after the French Valley which inspired it.  The second\, is a semi-soft washed rind cheese called Reading\, named after the town in which it is made.  The third\, is semi-soft washed rind cheese called Ashbrook\, which was inspired by French Morbier style cheese. \nMeet the Maker events are always FREE and OPEN TO ALL (…well\, must be over 21 to drink hard cider).
